We had a remarkable Gala Dinner at the residence of His Excellency Stefan Möbs, Ambassador for Germany to Kuwait, and his wife Ruth. HE Stefan is a Chevalier d’Honneur member of the Chaîne.

We were honoured to have the use of their garden as it was the perfect match for the evening’s themes “farm to table” and “nature back to the kitchen”.

The Regency Hotel's team created a charming set-up on the lawn. The themes were invigorated with natural, beautiful table decorations. The delicious menu revived them and stimulated our “umami”, the fifth sense of taste.

Hot-smoked lamb ribs, torched apple
celeriac, tongue and seaweed terrine

Tortellini
stuffed with organic fermented Jerusalem artichokes,
lemon grass cream and caper powder.

Fillet of hamour with broccoli, seaweed butter
lobster emulsion, potato gnocchi
black garlic ketchup, nibbed almonds

Lemon and ginger sorbet

Hay-smoked beef fillet and cheek
yeasted cauliflower puree
pickled onions, veal marrow

Chocolate tart with hazelnut biscuit
pumpkin with coffee ice cream, sugar shards

A very creative menu prepared with organic produce, utilizing traditional techniques of fermenting and smoking special ingredients. It gave us that full mouth sensation.

Our “umami” was stimulated by the tortellini, the relative sweetness of black garlic in the hamour fish fillet and the hay smoked beef fillet’s rich smoky taste - just to highlight a few of the diversity of tastes.

Everyone enjoyed a wonderful Gala Dinner, where everything complemented the night’s themes in an absolutely delightful manner. We very much appreciated being back experiencing unique cuisine and the camaraderie of the Chaîne in a magical setting.
